I’m so excited to share with you this delightful spin on a classic Italian dessert, Tiramisu…

especially as it pulls on my Italian roots ‘heart strings’.  Compared to the original, my version is protein packed, low in sugar, macro minded of course and super simple to throw together.  What’s not to love about this classic dessert, really?  Although this recipe has been on my list, it wasn’t until we found ourselves (yet again) hotel bound for a month (plus) with no oven, that I knew now was the perfect time, more than ever.  I brought this recipe to Easter dinner with my family and it was greatly received with my mom even raving that it was the “best dessert I’ve made!”, but to be fair, she hasn’t tried my Lightened Up Coffee Cake or my Lemon Crumble Cheesecake Bars, so…

I know you didn’t necessarily come here for a history lesson, but in case you are curious…

Origins of Tiramisu:

Tiramisu, meaning “pick me up” in Italian, is a dessert deeply rooted in the culinary history of Italy. Its exact origins are somewhat disputed, with various regions claiming its invention. However, most agree that Tiramisu gained popularity in the 1960s and 1970s, particularly in the Veneto region of Italy.

Legend has it that Tiramisu was created as a revitalizing treat for weary travelers, thanks to its invigorating  combination of coffee, mascarpone cheese, and cocoa. Over the years, it has evolved into a beloved dessert enjoyed worldwide, cherished for its rich flavors and creamy texture.

Now, let’s delve into this better for you, maximized nutrition recipe, protein-packed Tiramisu that will tantalize your taste buds while nourishing your body.

 

Healthy Protein Tiramisu Recipe:

Ingredients:

  • 8 oz nonfat cottage cheese
  • 8 oz nonfat Greek yogurt
  • 1 packet of vanilla sugar-free pudding mix
  • 2 tsp vanilla extract
  • 4 grams stevia or monk fruit (for sweetness)
  • 1 cup brewed espresso or strong coffee or 2 TB instant coffee ( I love this one!) mixed with 1 cup of water
  • 25 grams Amaretto spread (this is key for richness in flavor!  You can also use Iced Oatmeal Cookie and 1 tsp Amaretto extract)
  • 20 ladyfinger cookies (I bought mine at my local Sprouts, but you can also find them at your local Italian deli many times or here on Amazon)

Instructions:

  • In a high-speed blender, combine nonfat cottage cheese, Greek yogurt, vanilla pudding mix, vanilla extract, and your choice of sweetener. Blend until smooth and creamy. Set aside in the fridge to chill.
  • In a shallow dish, mix brewed espresso (or strong coffee) with Amaretto spread or Iced Oatmeal Cookie mixed with your amaretto extract. Ensure it’s well combined.
  • Quickly dip each ladyfinger cookie into the coffee mixture, ensuring both sides are coated. Be careful not to soak them for too long to prevent sogginess.
  • Arrange half of the soaked ladyfingers in an 8×8 baking dish to form the first layer.
  • Spread half of the chilled protein-rich custard mixture over the ladyfingers, creating an even layer.
  • Repeat the process with the remaining ladyfingers and custard mixture to form the second layer.
  • Dust the top of the Tiramisu with cocoa powder for a finishing touch.
  • Cover the baking dish with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  • Once chilled, slice and serve your Protein Tiramisu with a smile, knowing you’re indulging in a treat that nourishes your body and soul.
