We’re all adults here (well, mostly), and altogether, we know that too much sugar can be a real buzzkill for our health. Recipe: Lemon Raspberry Cupcakes

  • Cupcake Batter: In a large mixing bowl, combine Kodiak cakes pancake mix, quick oats, coconut flour, sea salt, powdered stevia, and erythritol (if using). Add in Nuzest Vanilla, vanilla extract, baking powder, nonfat Greek yogurt, egg whites, chopped raspberries, and the juice and zest from one lemon. Mix until well combined.
  • Baking: Fill each cupcake liner to the edge with batter (using a large ice cream scoop works well for this). Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.
  • Frosting: While the cupcakes cool, prepare the frosting. In a bowl, combine nonfat Greek yogurt, Lemoncello spread, Simply Delish Vanilla Sugar-Free Pudding mix, a dash of sea salt, and stevia to taste. Mix until smooth and creamy.
  • Assembly: Spoon the frosting into a large freezer zip lock baggie and place it in the fridge until ready to use. Once the cupcakes are cooled, cut a small hole in the corner of the bag and, in a spiral motion, squeeze the frosting onto each cupcake (about 35 grams each).
