your health, happiness and sweet treat foodie experience are always foremost in my mind.   I’m always on the lookout for delicious yet nutritious ways to support both our health and to satisfy our taste buds (but, never in that “this is tastes healthy kind of way, if you know what I mean?) That’s why I’ve created these Sweet Potato PB Chocolate Brownies—they’re not just your average treat; they’re a powerhouse of nutrients, carefully designed to satisfy your cravings while nourishing your body.  Again, healthy, happy and satisfied is always the goal around here.

Sweet potatoes, the star ingredient of these brownies, are a nutritional powerhouse in their own right. I’m OBSESSED with all potatoes, but sweet potatoes will always have a special place in my heart and belly.  This superfood gets such a bad rap much of the time, but at their core, they are packed with vitamins, minerals, and provide a host of health benefits. They’re rich in antioxidants like beta-carotene, which supports eye health and boosts immunity. And, additionally, their high fiber content aids digestion and promotes a feeling of fullness, making them a great addition to any balanced diet. By incorporating sweet potatoes into these brownies, I’ve elevated their nutritional profile, ensuring that every bite not only delights your taste buds but also supports your overall well-being and satiation.

 

Ingredients:

  • 325 grams cooked sweet potato (about 1 jumbo or 2 medium sweet potatoes)
  • 60 grams Nuzest rich chocolate protein powder
  • 80 grams egg whites
  • 50 ml unsweetened cashew milk
  • 20 grams cocoa powder
  • 4 grams sea salt
  • 3 grams stevia powder or monk fruit
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 50 grams erythritol (optional, but adds the perfect amount of extra sweetness)

Topping:

Instructions:

  • Begin with the Sweet Potatoes:
    • Start by cooking your sweet potatoes. You can either bake them in foil at 400°F (200°C) for an hour or use the microwave method (cook in a bowl with 1-½ inches of water, cover and cook for about 5-6 minutes) for a quicker option. Once cooked, let them cool, peel, and mash in a large bowl.
  • Combine the Ingredients:
    • Add Nuzest rich chocolate protein powder, egg whites, unsweetened cashew milk, cocoa powder, sea salt, stevia powder or monk fruit, baking powder, baking soda, and erythritol (if desired) to the mashed sweet potatoes. Mix thoroughly until all ingredients are well incorporated.
  • Prepare the Topping:
    • Transfer the brownie mixture into an 8×8 parchment paper-lined baking dish. Drizzle Protein PB in an ‘S’ shape over the brownie mixture. Using a toothpick or knife, create swirls of Protein PB throughout the brownie batter. Sprinkle with sugar-free chocolate chips for an extra touch of indulgence.
  • Bake to Perfection:
    • Preheat your oven to 350°F (175°C). Bake the brownies for 32-34 minutes, or until a toothpick inserted into the center comes out clean.
  • Enjoy Mindfully:
    • Once baked, allow the brownies to cool completely in the baking dish. Then, slice into 6 servings and savor each bite mindfully, appreciating the nourishment and flavor packed into every square.
