Crafting Your Lemon Lush Bars:

Now, let’s get down to business and whip up these delightful bars that celebrate the goodness of lemons:

Crust: We start with a wholesome oat flour base, enriched with the zesty sweetness of Lemoncello spread and the creaminess of cashew milk.

Lemon Layer: Our tangy lemon layer combines the refreshing juice of fresh lemons with the creaminess of unsweetened cashew milk and the subtle sweetness of sugar-free lemon pudding.

Cream Layer: For a decadent yet nutritious cream layer, we blend nonfat Greek yogurt with sugar-free vanilla pudding and a touch of light Cool Whip, creating a luscious topping that’s as guilt-free as it is indulgent.

Today, I’m thrilled to share a recipe that’s like a burst of sunshine on a plate – Lemon Lush Bars. If you’re craving something tangy, sweet, and utterly delightful, this one’s for you.

Ingredients:

Crust:

  • 125 grams oat flour
  • 70 grams powdered erythritol (just blend your erythritol in the blender for 10-15 seconds till powdery or use coconut sugar if you prefer)
  • 3 grams sea salt
  • 28 grams Lemoncello spread
  • 70 grams unsweetened cashew milk

Lemon Layer:

  • Juice of one large lemon (approximately 50-55 ml)
  • 150 ml water
  • 50 ml unsweetened cashew milk
  • 1 packet sugar-free lemon pudding

Cream Layer:

Instructions:

  • Prepare the Crust: Start by mixing all your dry ingredients in a large bowl. Then, add your wet ingredients and combine until you have a cohesive dough. Press this mixture evenly into an 8×8’’ baking dish to form the crust. Set it aside while you prepare the other layers.
  • Make the Lemon Layer: In a high-speed blender, blend together the lemon juice, water, cashew milk, and sugar-free lemon pudding until smooth. If you can’t find lemon pudding, vanilla works as a delicious alternative. Allow this mixture to chill and thicken in the fridge while you move on to the next step.
  • Prepare the Cream Layer: In the same bowl you used for the crust (because who wants extra dishes?), mix together the Greek yogurt, sugar-free vanilla pudding, and light Cool Whip until well combined.
  • Assembly: Once the crust is ready, spread the cream layer evenly over the top. Then, carefully pour the chilled lemon layer over the cream layer.
  • Chill and Serve: Pop your Lemon Lush Bars into the fridge for at least an hour to allow everything to set and meld together beautifully. When you’re ready to indulge, slice them into 8 pieces and serve with a dollop of optional whipped cream.
