Instructions:

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8” baking dish with parchment paper.
  • In a mixing bowl, combine all the dry ingredients for the cake base: oat flour, protein powder, coconut flour, sea salt, powdered stevia or monk fruit, erythritol (if using), cinnamon, and baking powder. Mix well.
  • Add the wet ingredients for the cake base: nonfat Greek yogurt, egg whites, vanilla extract, and cashew milk to the dry ingredients. Stir until well combined.
  • Pour the cake batter into the prepared baking dish, spreading it evenly.
  • To make the crumble topping, mix oat flour, melted Cocoa Bar Pumpkin Spice spread, brown sugar Swerve (or coconut sugar), a pinch of salt, cinnamon, and 1-2 tablespoons of unsweetened cashew milk in the same bowl used for the cake base. Use a fork to combine until a crumbly texture forms.
  • Sprinkle the crumble topping evenly over the cake batter in the baking dish.
  • Bake the coffee cake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  • Once baked, remove the coffee cake from the oven and allow it to cool completely in the baking dish.
  • Once cooled, slice the coffee cake into 4 meal-sized portions or 9 smaller dessert portions.
  • Serve and enjoy!
