There’s something truly comforting about enjoying a perfectly portioned, easy to grab and go, homemade, freshly baked muffin. And when that muffin is packed with wholesome ingredients and superfoods, like these Superfood Carrot Bran Muffins, it’s not just a treat for my taste buds—it’s a nourishing experience for my body and soul.

 

Embracing the Goodness of Fiber and Flax:

Fiber and flax have become essential components of my daily routine, thanks to their incredible health benefits. Fiber keeps my digestive system running smoothly, helps me feel full and satisfied, and supports my overall well-being. Flaxseed, with its omega-3 fatty acids and lignans, adds an extra nutritional boost, promoting heart health and reducing inflammation.  Not only do these muffins contain both ingredients but so much more with the wheat bran, carrots, pecans and raisins…

 

Here’s How I Make Them!

 

Ingredients:

  • 100 grams oat flour
  • 30 grams vanilla Nuzest protein powder 
  • 10 grams ground flaxseed
  •  7 grams coconut flour
  • 30 grams wheat bran flakes
  •  1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 4 grams cinnamon
  • 4 grams sea salt
  • 3 grams stevia
  • 40 grams erythritol (optional, but I think the combination of stevia and erythritol gives the recipes a more authentic sweetener taste)
  • 85 grams finely grated carrot (about one medium)
  • 125 grams egg whites
  • 2 tsp vanilla extract
  • 200 ml unsweetened cashew milk
  • 28 grams Pumpkin Spice Cocoa Bar
  • 20 ml molasses
  • 30 grams raisins
  • 20 grams chopped pecans or walnuts

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with 11 muffin liners, giving them a light spray of cooking spray.
  2. In a large mixing bowl, I combine the oat flour, vanilla Nuzest protein powder, ground flaxseed, coconut flour, wheat bran flakes, baking powder, baking soda, cinnamon, sea salt, stevia, and erythritol (if I’m feeling I want things extra sweet, which I usually do). 
  3. Add in the grated carrots, egg whites, vanilla extract, and unsweetened cashew milk to the dry ingredients, I gently fold everything together, relishing the aroma of cinnamon and spices filling the air.
  4. Add in your Pumpkin Spice Cocoa Bar and molasses adding a rich, indulgent flavor that makes these muffins truly irresistible.
  5. Toss in the raisins and chopped nuts for the chefs kiss.
  6. Using a large ice cream scoop, I fill each muffin liner with batter.
  7. Into the oven they go for about 22 minutes, where they bake to golden perfection, filling your kitchen with warmth and anticipation.
  8. As they cool on the wire rack, try to control yourself, knowing that each bite is going to fuel your body with so much yummy goodness.
