Ingredients:

  • 40 grams quick oats
  • 100 grams oat flour
  • 10 grams cocoa powder (omit if using a chocolate protein powder)
  • 4 grams sea salt
  • 3 grams powdered stevia
  • 100 grams erythritol (optional)
  • 60 grams Nuzest Chocolate or dairy-free protein powder of choice (use code MONIQUE for 15% off)
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 250 grams unsweetened canned pumpkin
  • 300 grams egg whites
  • 28 grams Chocolate Brownie or Cafe Mocha spread
  • 7 grams natural red food coloring
  • 60 ml unsweetened almond milk

For the Greek Yogurt Topping:

Instructions:

  • Preheat your oven to 350°F (175°C) and line a 9×11 baking dish with parchment paper or grease it lightly.
  • In a high-speed blender, combine all the your breakfast bar ingredients except the quick oats. Blend until smooth and well-combined.
  • Stir in the quick oats until evenly distributed throughout the batter.
  • Pour the batter into the prepared baking dish, spreading it out evenly.
  • Bake in the preheated oven for 32-34 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the brownie bars from the oven and allow them to cool completely in the baking dish.
  • In a small bowl, mix together the Greek yogurt, sugar-free pudding mix, sea salt, and powdered stevia to create the topping.
  • Once the brownie bars are cooled, spread the Greek yogurt topping evenly over the surface.
  • Slice into bars and serve, or store in an airtight container in the refrigerator for later enjoyment.
