PB Cheesecake Bars

Cheesecake Layer:

Topping:

Prepare your crust by crumbling into your high speed blender or food processor with your milk and mix or pulse until it starts to stick together or ball up.  Press evenly into an 8 x 8” baking dish. For your cheesecake layer, in a bowl, with a hand mixer, combine all ingredients except your Cocoa Bar topping.  Once combined well, pour onto your crust layer.  Drizzle your Cocoa Bar on top in an ‘S’ technique, then swirl through with a knife or chopstick in the opposite direction, in an up and down, swirling motion.  Bake 325 for 40-43 minutes. Let cool completely then chill in the refrigerator for at least 3 hours, but preferably overnight.  Slice into 9 pieces or 16 smaller, mini cheesecake portions and enjoy!
