Small Batch, Healthy Chocolate Chip Cookies

Small Batch Oil/Butter/Egg Free Chocolate Chip Cookies  

I have to admit.  I’m not a butter fan.  Not much of an oil fan either.  So many calories for the smallest of portions, zero fiber, not much of a micronutrient source, more often than not, not much fun to eat on its own so simply not worth it to me.  Overall, I’d rather eat the bulk of my fats via chocolate, nuts, seeds, avocados, olives, coconut, etc.  Wholefoods baby! So when I can sub out the butter and oil, especially with Cocoa Bar In A Jar and it works out beautifully, I’m all in!

These came out sneakily chewy although the outside may look a bit dry.  The macros are exceptional, and the small batch option makes these quick, easy, and macro minded.

To make:

Preheat oven to 350 degrees.

Combine:

•30 grams of Cocoa Bar In A Jar Iced Oatmeal Cookie with 30 grams of brown sugar and 30 grams of coconut sugar (or sweetener of choice).  Add in 1/2 tsp vanilla and 60 ml of unsweetened almond milk.  Once combined add in 120 grams of all purpose or gluten free flour, 1/2 tsp baking soda and 1/4 tsp sea salt. Once combined mix in 1/3 cup (60 grams) of chocolate chips (I used sugar free here).  Place large TB sized portions on a lined baking sheet.  Press cookies flat.  Bake for 11 minutes.  Let cool and enjoy!
