Macro Friendly Apple Pie Scone for one!

 

I LOVE scones, but not always the macros and/or ingredients.  Especially if it’s something I’d like to enjoy on the daily (check out the stats compared to Starbucks scone below). This dry bakery good never ceases to make me drool, and this butter free version made my heart swoon 10 fold and I hope it makes yours skip a beat, too!

Dry + IOC:
40 grams all purpose or oat flour
1-2 TB of coconut sugar or brown sugar alternative
Stevia to taste (optional)
1 TB of Iced Oatmeal Cookie COCOA BAR IN A JAR
1/2 tsp baking powder

Wet:
2 TB of unsweetened apple sauce
Splash of almond milk
50 grams chopped apples (tossed in a sprinkle of cinnamon)

•Combine your dry ingredients and IOC.  Mixture will be very crumbly and not necessarily evenly distributed.  That’s okay!  Then add the wet starting with your splash of almond milk and applesauce.  Once incorporated and pasty, add in your apples.  Form into one giant scone (or two if you want to make a smaller portion) and bake at 350 for 20-22 minutes.  Top with an extra drizzle of IOC and enjoy!  Paired with some egg whites and you have an incredibly satisfying, delicious macro balanced meal!

Macros: (one giant scone using brown sugar alternative): 247 calories/ 44.5c/5.8f/5p
(Two smaller scones, each): 123 calories/22c/2.6f/2.5p
**Compared to Starbucks Cinnamon Scone: 480 calories/70 carbs/18f/7p
