Pumpkin Protein Brownies
It’s officially pumpkin season and all about using pumpkin in as many recipes as possible. It’s super nutritious (hello Vitamin A and fiber), a great substitute for oil or butter, adds volume and density. Paired up correctly, it can work in so many different ways! This week I created brownie recipe that just won’t quit. Truly. These brownies are UNREAL, let me just tell you. So moist, so dense, so chocolatey, I just can’t say enough beautiful things about this recipe. You can either plate 1/4 of your 8×8 pan and go all in on this macro minded slice, or half the recipe portions to (try) and make this goodie last longer. With 18 grams or 9 grams of protein respectively, meal or snack, I’ll let you be the judge. I LOVED pairing this one with whipped cream and/or a half of a pint of Vanilla or Chocolate Creami because I’m a sucker for all things sundaes. I included my Lightened Up Creami recipe below as a bonus. Hope you and yours love this low sugar, but you’d never know the difference delight!
Ingredients:
- 1-15 ounce can of unsweetened pumpkin purée
- 40 grams dark cocoa powder
- 2 tsp vanilla
- 65 grams erythritol (*optional)
- 100 grams egg whites
- 4 grams sea salt
- 4-5 grams powdered stevia (add more or less depending on how sweet you want them)
- 1.5 tsp baking powder
- 80 grams chocolate active stacks
- 40 grams Chocolate Brownie Batter Spread
Topping:
- 22 grams sugar free chocolate chips
To make:
To make: Blend all ingredients, except your chocolate chips till silky smooth in a high speed blender. Pour into an 8×8 inch parchment paper lined baking dish. Bake for 38-40 minutes. They may seem undercooked a bit, that’s okay! The gooey-er the better. Let cool completely before slicing. Cut into 4 massive slices or 8 smaller pieces, both macros listed below. Top with a scoop of Vanilla Creami, some whip and extra Cocoa Bar drizzles, fresh berries or enjoy all on their own. You really can’t go wrong here. So good!

Lightened Up Vanilla Creami Base:
Ingredients:
- 10 ounces unsweetened cashew milk
- 30 grams 2% cottage cheese
- 7 grams Sugar Free Vanilla pudding (I use Simply Delish Naturals)
- 15 grams Plain Whey Protein
- 1 tsp vanilla extract
- 2 TB Erythritol
- Pinch of sea salt
- Stevia to taste
To make:
Combine/blend all of your Creami ingredients except your mix ins and toppings and pour into your 16 ounce Creami pint. Freeze overnight (at least 10 hours). Prepare on the ice cream mode, then add 2 TB additional milk and spin again on “re-spin”. You may have to give it one more re-spin if still crumbly.
