High Protein, Grain Free Lemon Cheesecake Bars

Lemon Cheesecake Bars! And the whole shebang for less than 220 calories!
I’ve been making this recipe for YEARS and just recently shared in my stories, but I’ve never officially shared the recipe (tsk tsk). I wasn’t sure if this ‘bean cake’ would make you swipe away or swoon (if you make these I’m pretty certain it will be the latter.  They are SO good!  And you can’t beat the macros!)

They are fiber packed and DO contain sugar alcohols, so if you are sensitive to either of these things, be wary. You can also substitute the Swerve for Honey (60 grams), just not the macros will vary.

Base Ingredients:
1 can (250 grams) northern white beans strained and rinsed well.
150 grams egg whites
14 grams coconut flour
25 grams vanilla or plain vegan protein powder
110 grams Erythritol or Swerve
5 grams of psyllium husk (*optional, but if you don’t use this your bars will be more crumbly, yet fluffier.)
1/2 tsp sea salt
Stevia to taste
1 1/2 tsp baking powder
Juice and zest of one lemon

Cheesecake topping ingredients per 1/4 of tray (I prep and make this the day I eat it):
125 grams Greek yogurt (or dairy free alternative) mixed with stevia vanilla and/or lemon extract
25 grams blueberries
5 grams of Iced Oatmeal Cookie (or more, but I find a little goes a long way with this one)

To make: Blend all cake ingredients in a high speed blender till smooth (just about 20-30 seconds). Pour into a parchment paper lined 8 x8 baking pan and bake for 42-45 minutes till cooked through.  Cool thoroughly.  Refrigerate to chill. Just before  enjoying, mix your ‘cheesecake’ ingredients and spread on your bar.  Top sign your blueberries and your Iced Oatmeal Cookie drizzle. Enjoy!  I love to prep these for the week and enjoy it as a pre-dinner snack when I’m getting snacky and craving a sweet . Let me know if you give these a whirl!
