Greek Yogurt Oreo Mud Pie

I am so excited to share this recipe with you all!  I have been playing with this one for a while now, but was having some issues with the texture.  It took some tweaks, but I finally got it!  And, you’re going to love it!  It’s no bake, easy to serve and holds together so well, all the while checking all the health boxes we hold dear to our hearts over here.  Each slice is only 99 calories and has over 10 grams of protein, without any added protein powder.  There is also no added sugar, the fat is extremely low, and the taste is just, well…perfect.  It’s sweet, yet a bit tangy from the chocolate and Greek yogurt and that little bit of Oreo crunch on top adds the perfect added texture, still keeping the simple carbs to a minimum (just the way we like it;).  Let me know if you try this one in the comments below or tag me on Instagram with your creations and I’ll be sure to re share!



 

Ingredients:

  • 700 grams nonfat Greek yogurt (I used my favorite, Fage)
  • 20 grams black cocoa powder or dark cocoa powder
  • 2 tsp Vanilla 
  • 5 grams sea salt
  • 5 grams powdered stevia (or sugar free sweetener of choice)
  • 40 grams melted Cocoa Bar Peanut Butter Cup spread 
  • 43 grams (1 box) sugar free chocolate pudding (I used @simplydelishnaturals )
  • Topping: 3 crushed Oreo Cookies (cream removed) 

To make:

Combine all ingredients except the Cocoa Bar PB Cup spread in a large bowl till combined well.  Once incorporated, add in your melted Cocoa Bar spread and fold together.  Line a round 8×8 baking dish with parchment paper and spread the mud pie filling evenly in the pan, pressing down with a spoon or spatula in the corners.  The batter is sticky, so you may want to dampen your spoon or spatula before pressing down intermittently so it doesn’t stick.  Then take your 3 Oreo cookies, cream removed and place in a small zip lock baggie.  Crush with with a mallet or method/tool of your preference.  Sprinkle the Oreos over the entire surface of the pie. Chill for at least 3 hours to set before slicing and serving.  Slice into 8 even slices.  Top with a dollop of whipped cream (chefs kiss) before serving.  Enjoy!
