Peanut Butter Chocolate Marble Cake

Peanut butter and chocolate never get old around here and any variation using the two of these usually makes it’s way onto my plate daily.  This is an other ‘better than a protein bar’ option clocking in at almost 20 grams of protein per each massive satisfying slice.  Insanely moist, decadent perfectly salty and sweet without all the added sugar. Top with some Vanilla or Chocolate Creami scoops of ice cream or some whipped cream and extra Cocoa Bar drizzles like I did here if you want to get extra in that slice. Lol!  Seriously though, this cake is so full of good for you ingredients and low in sugar, I dare say breakfast is served!  Especially because I also included my favorite ‘secret’ ingredient, beans!  Trust me, you won’t even know they are there except when you feel how satisfied you are after eating a slice (can you say I love volume and fiber?!)  Now, line up your blender and ingredients and let’s make the Peanut Butter Chocolate Marble Cake!.




 

 

Ingredients:

  • 245 grams white or garbanzo beans drained and rinsed very well.
  • 150 grams egg whites 
  • 3 grams sea salt
  • 3 grams powdered stevia 
  • 25 grams Protein PB spread
  • 40 grams vanilla Active Stacks (code COCOABAR for 10% OFF)
  • 2 tsp baking powder
  • 45 ml unsweetened almond milk 
  • 1 tsp caramel extract/flavor (or vanilla if you don’t have caramel.  It just won’t have that caramel flare, but still totally delicious!) 
  • 5 grams psyllium husk
  • 14 grams coconut flour
  • 40 grams pb powdered peanut butter
  • 55 grams of erythritol 
  • Topping: 25 grams PB Cup spread

To make:

Blend all ingredients in your high speed blender or food processor.  Pour into a parchment paper lined or greased 8x 8 baking dish.  Then drizzle and swirl your PB Cup spread through your cake.  Bake for 32-34 minutes at 350.  Let cool completely (best served at room temp or chilled the next day).  Top with whipped cream, a scoop or two of chocolate or vanilla Creami or enjoy all on its own for a quick, healthy grab and go treat!
