Summer has me loving all the ‘in season’ fruits and there is no shortage of it in this household right now.  Everyone’s got their thing.  My oldest son loves apples (actually the only fruit he’ll eat), my youngest, eats the rainbow, and my man and I are devoted to bananas, berries with a side of cherries, peaches and greens apples.  Although I don’t eat them regularly, I LOVE anything peach!  Peach cobbler, pie, cakes, pastries, gummy candy (these things get me every time and not in a good way;).  Thankfully, I have a healthified version for us peach lovers this week that is the perfect compliment to your vanilla Creami or Greek yogurt.  The ingredients are beautiful, clean and nourishing and you won’t need a nap after having this treat for breakfast or dessert.  With over 23 grams of protein and over 7 grams of fiber, there’s nothing not to love here.  Hope you love it as much as us!  Let us know what you think in the comments or if you make this recipe and share on Instagram, please tag us so we can admire and share your creations.  Now, let’s eat…

 

Ingredients:

Topping:

  • 90 grams additional peaches chopped and mixed in.

To make:

Blend all ingredients in a high speed blender except the 90 grams of chopped peaches.  Pour into a parchment paper lined or greased 8×8 baking dish. Top with additional chopped peaches. Bake at 350 for 28-30 minutes.  Let cool completely.  Top with whipped cream, sweetened Greek yogurt or a scoop of vanilla Creami and enjoy!
