If you LOVE the Lemon Cheesecake Bars as much as I do, you’re going to absolutely adore this Orange Cake Bake! Much like the Lemon Cheesecake Bars, we have a perfectly balanced, volume based sweet treat that is just what the doctor ordered. (Seriously, the ingredients are too good to be true and the taste?! Unbelievably good is an understatement!) So fluffy, so light, macro minded of course and with the perfect orange essence. Move over protein bars, I think these cakes are taking over…
Orange Cake Ingredients:
225 grams white beans (drained and rinsed very well)
30 grams vanilla or plain whey protein powder (I used Naked Nutrition Whey)
1 1/2 tsp vanilla
1/2 small orange peel
Juice from 2 small oranges
3 grams Stevia powder
65 grams Erythritol
21 grams coconut flour
2 tsp baking powder
3/4 tsp sea salt
4 grams psyllium husk powder
22 grams Iced Oatmeal Cookie spread
150 grams egg whites
Greek Yogurt Topping:
125 grams nonfat Greek Yogurt (I use Fage)
4 grams sugar-free vanilla pudding mix (I use this one)
Stevia to taste
Sprinkle of sea salt
To make:
Combine all ingredients in a high speed blender, including orange rind, till smooth. Pour into a lined 9×11’’ baking dish and bake at 350 for 40-42 minutes. Let cool completely (best room temp or chilled overnight.) Top with the Greek Yogurt topping as a delicious frosting and for added protein. Enjoy!
