Indulge Decadently with this Lightened Up Oreo Mud Pie!

Hey there, fellow dessert lovers! Today, I’ve got a treat that’s sure to make your taste buds dance with joy while keeping your health goals in check.  Say hello to your new bestie (this week;) my Lightened Up Oreo Mud Pie – a delightful twist on a classic favorite that’s as satisfying as it is nutrient dense and sugar crash-free. Packed with rich flavors and wholesome ingredients, this recipe is a celebration of indulgence without compromise. So, grab your apron or go rogue like me, and let’s dive into the deliciousness!

Ingredients:

  • 50 grams lite Cool Whip (highly recommended)
  • Chopped almonds or peanuts

Instructions:

  1. Prepare the Crust: In a bowl, combine oat flour, black cocoa powder, powdered erythritol, sea salt, PB Cup spread, and unsweetened cashew milk until well mixed. Press the mixture into the bottom of a 9-inch pie dish to form an even crust. Place it in the freezer while you prepare the filling.
  2. Make the Chocolate Layer: In a high-speed blender, blend together unsweetened cashew milk and sugar-free chocolate pudding mix until smooth. Refrigerate the mixture to chill and thicken while you prepare the PB cream layer.
  3. Prepare the PB Layer: In a mixing bowl, combine nonfat Greek yogurt, sugar-free vanilla pudding mix, Peanut Flour, powdered stevia, sea salt, and Protein PB. Mix until well combined.
  4. Assemble the Pie: Remove the crust from the freezer and spread the PB layer evenly over it. Then, pour the chilled chocolate layer over the PB layer. If desired, top with defrosted lite Cool Whip for an extra indulgent touch.
  5. Chill and Serve: Refrigerate the pie for at least 4 hours, or until set. Once set, slice into 8 pieces and savor each delightful bite!
