Cinnamon Apple Pancake Bars

Another weekend win with these big batch Cinnamon Apple Pancake Bars!  Whether you prep these for the week or make for the whole family, this recipe is super easy, macro/micro balanced and totally yummy (especially if you love apple everything-these give me apple fritter vibes.  So good!)

Ingredients:

110 grams unsweetened apple sauce
50 grams Iced Oatmeal Cookie spread
80 grams non-fat greek yogurt (or dairy free if preferred)
90 grams Erythritol (or any granulated sugar-free sweetener)
3 grams sea salt
2 gram cinnamon
1 tsp vanilla or almond extract
80 grams oats
50 grams Active Stacks vanilla protein powder (use code COCOABAR for 10% off)
2 tsp baking powder
55 grams protein pancake mix(I used Birch Benders Plant Protein Pancake mix)
150 grams egg whites
60 ml unsweetened almond milk
60 ml water
5 grams psyllium husk
*Stevia to taste (optional)60 grams finely chopped apples

Blend all ingredients except chopped apples in your high speed blender.  Pour into a parchment paper lined 12 x 7 baking dish. Sprinkle and gently swirl in chopped apples leaving plenty to still be seen on the surface of the mix.  Bake for 45-48 minutes.  Top with sugar free maple syrup, extra apples, whipped cream and maybe an additional drizzle of Iced Oatmeal Cookie (because, yum!). Enjoy!
