Peanut Butter Chocolate Chip Blondies

More macro/micro magic that tastes too good to be true.  Good thing they are…One GIANT slice is only 225 calories and almost 20 grams of protein.  Made with beans, these are high in fiber and lower in carbs in comparison to most oat baked bars of the same size. Refined sugar free, dairy free, egg free optional, as well as gluten free optional.

In a high spend blender combine:

255 grams white or garbanzo beans (drained and rinsed very well!)
25 grams protein pancake mix (I used Birch Benders Plant Protein Pancake mix)
125 grams erythritol (or any granulated sugar free sweetener)
1 tsp sea salt
Stevia to taste
2 tsp Vanilla
1 tsp baking powder
1/2 tsp baking soda
14 grams coconut flour
25 grams pea protein (can use any plain or vanilla vegan protein powder)
40 grams protein pb
100 grams greek yogurt (or non-dairy)
100 grams egg whites (optional, but provides extra fluff as well as added protein)
60 ml Almond milk (150-170 ml if not using egg whites)

*top with 25 grams sugar free chocolate chips

Pour into a lined or greased 8’’x8’’ baking dish. Top with your chocolate chips. Bake at 350 40-42 minutes.  Best eaten the next day once the flavors really come together and settle.  Top with whipped cream, berries and/or a drizzle of Cocoa Bar!  I used the Heavenly Hazelnut here.  Yum!
