Recipe: 

Brownie Base

  • 40g Cocoa Bar In A Jar Cafe Mocha Spread
  • 8 oz unsweetened applesauce
  • 50g unsweetened cocoa powder
  • 1 tbsp instant coffee
  • 2 tsp baking powder
  • 40g honey or sugar-free sweetener of choice
  • 3g sea salt
  • 3g stevia powder (optional for extra sweetness)

Tiramisu Cream Layer

  • 30g whipped cream
  • 20 oz nonfat Greek yogurt
  • 1 packet sugar-free pudding mix (either vanilla or salted caramel from Simply Delish work perfect here!)
  • 1–2 tsp almond or rum extract
  • 4g stevia
  • Pinch of sea salt

Directions

  1. Prepare the Brownie Base:
    Preheat your oven to 350°F. Combine all brownie base ingredients in a mixing bowl and stir until smooth. Line or grease a large rectangular baking dish, pour the batter in, and spread evenly.
  2. Bake:
    Bake for 22 minutes. The base will remain slightly underdone—this is what makes it perfectly gooey!
  3. Mix the Tiramisu Layer:
    While the brownie base bakes, prepare the tiramisu topping. In a bowl, mix Greek yogurt, pudding mix, almond/rum extract, stevia, and salt. Once smooth, gently fold in the whipped cream for a light, airy texture. Refrigerate until ready to use.
  4. Cool and Assemble:
    Allow the brownie base to cool completely. Once cooled, spread the tiramisu cream layer evenly on top. Dust with unsweetened cocoa powder for a classic tiramisu finish.
  5. Cut and Serve:
    Slice into 8 equal pieces and enjoy!

  • For an even stronger coffee flavor, dissolve the instant coffee in a teaspoon of water before adding to the brownie batter.
  • Want extra protein? Use a thicker Greek yogurt or increase the whipped cream for added fluff.
