Salted Caramel Cottage Cheese Brownies

Cottage cheese is having her moment and I’m here for it. Especially because it sneakily adds all this extra protein and keeps carbs relatively low. This fudgy and decadent brownie checks all the macro boxes. Oh! And, did I mention these brownies are massive? 4 bars for only 191 calories or 8 for 95 calories if you want a more traditional slice. Breakfast or dessert? You do you.
Salted Caramel Cottage Cheese Brownies Ingredients:
300 grams 2% cottage cheese
50 grams dark cocoa powder (I use this one)
2 tsp vanilla (or caramel flavoring for extra caramel yum)
83 grams Erythritol
92 grams egg whites
1 tsp sea salt
1.5 tsp baking powder
40 grams Active Stacks Chocolate
14 grams coconut flour
Topping:
•28 grams Salted Caramel Crunch swirled on top
To make:
Blend all ingredients, except your topping, until silky smooth in a high speed blender. Pour into an 8×8 inch parchment paper lined baking dish. Bake at 350 for 40-42 minutes. Let cool completely. Top with a Salted Caramel Crunch, scoop of Vanilla Creami, some whip, fresh berries or enjoy all on their own. You can’t go wrong here.
