Pumpkin Swirl Cheesecake Bars
Today, I’m really excited to share a recipe that’s perfect for fall: Pumpkin Swirl Cheesecake Bars. These bars are not only delicious but also packed with nutrients thanks to the pumpkin. You can enjoy these as a lunch dessert, a healthy snack or as a complete meal if you decide to enjoy the meal size portion for less than 330 calories.

Pumpkin is more than just a Halloween staple, yet perfect for the season. It’s a nutritional powerhouse that offers a variety of health benefits:

Get Ready to Bake!
Ingredients:
- Cake Base:
- 8 ounces unsweetened pumpkin puree
- 40 grams Pumpkin Spice or Amaretto spread
- 1 tsp apple cider vinegar
- 2 tsp pure vanilla extract
- 120 grams all-purpose flour (or oat flour)
- 92 grams egg whites
- 40 grams coconut sugar (feel free to sub with sugar-free alternative)
- 4 grams stevia
- 2 tsp cinnamon
- 1 tsp pumpkin spice
- 4 grams sea salt
- 1 tsp baking powder
- 3/4 baking soda
- Cheesecake Layer:
- 400 grams non-fat Greek yogurt
- 38 grams egg whites
- Pinch of sea salt
- 3 grams powdered stevia
- 22 grams sugar-free vanilla pudding
- 1/2 tsp vanilla extract
- Pumpkin Swirl:
- 4 ounces of pumpkin puree
- 1 tsp cinnamon
- 1 tsp vanilla
- Dash of stevia
Instructions:
- Combine all cake base ingredients in a large bowl.
- Pour and spread evenly in an 8×8” lined or greased baking dish.
- Add cheesecake layer ingredients to the same bowl and mix until smooth. Pour and spread evenly over the cake base.
- Combine pumpkin swirl ingredients and dollop your pumpkin mixture evenly over the top of the cheesecake layer (about 9 dollops) and then with a knife or the back of a fork, swirl through your pumpkin layer up and down, back and forth, across, and again, up and down and back and forth, across, until you have a nice swirl throughout.
- Bake at 350°F for 38-40 minutes.
- Let cool completely before cutting and serving.
