Ingredients:
- 255 grams white or garbanzo beans (about 1 can, drained and rinsed very well)
- 40 grams oat flour
- 14 grams coconut flour
- 111 grams erythritol
- 1 tsp sea salt
- 4 grams powdered stevia
- 2 tsp vanilla extract
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 40 grams Cocoa Bar Pumpkin Spice spread
- 150 grams unsweetened pumpkin puree
Topping:
- 28 grams peanut butter chips ( I used Trader Joe’s brand)
Instructions:
- Preheat your oven to 350°F (175°C). Line or grease an 8×8-inch baking dish.
- In a high-speed blender or food processor, blend all ingredients (except the peanut butter chips) until smooth.
- Pour the batter into your prepared baking dish and spread evenly.
- Sprinkle the peanut butter chips on top.
- Bake for 40-44 minutes, or until a toothpick comes out mostly clean.
- Let the blondies cool completely—these are even better when chilled overnight, as the flavors meld beautifully. Cut into 8 bars.
- Top with whipped cream and a drizzle of Cocoa Bar for an extra treat, and enjoy!
