Protein French Toast Bake



If you love French Toast, you’re going to love this. This butter free crumble topping is incredible and the overall macros are amazing.  So easy to throw together (prep it the night before) and a fantastic crowd pleasing treat for the weekend. If you can’t find the bread I use or prefer to use another low carb option, macros are customizable.  Below there are MFP entries for both the full recipe as is and another that includes all ingredients minus the bread for customizing.

French Toast Base:

14 slices low carb Oasis brand bread (or low carb bread of choice)
3/4 cup unsweetened almond milk
600 grams eggs whites
1 TB Cinnamon
1 tsp Vanilla
1/2 tsp Sea salt
Powdered Stevia (this one is my favorite!) to taste

Crumble Topping:

25 grams coconut sugar
40 grams quick oats
Pinch of Sea salt
56 grams melted Iced Oatmeal Cookie Spread

To make:

Slice your bread diagonally and place in a 9 x11’’ baking dish.  In a blender, combine all French toast base ingredients in a blender or mix in a bowl well till incorporated. Pour evenly over the bread making sure to saturate each slice.  Then make your crumble topping by mixing all ingredients together till crumbly.  If too dry, add just a (very slight) splash of almond milk till nice and crumbled.  Sprinkle and distribute over the top of your French Toast.
Cover with foil and chill for at least a half hour, or overnight.  Bake at 350 for 25-30 minutes.  Top with sugar free syrup, whipped cream, berries and/or a drizzle of Iced Oatmeal Cookie. Yum!
