Mini Protein Peanut Butter Oat Cups

Rounding out this #nationalwellnessmonth, I’ve been loving all things mini right now, and these Mini Protein Peanut Butter Cups hit the nail on the head.  They are full of wholefood ingredients, are low in sugar, gluten free and delicious!  The oats add the perfect granola bar type vibe, the honey adds the just enough extra sweetness and the ganache chocolate peanut butter topping is AH-MAZING!

Base, combine…

•80 grams quick oats

•3 ounces of Cocoa Bar In A Jar Protein PB

•40 grams honey

•25 grams of Protein Powder or PB 2 ( I used PB2)

•60 grams of reduced fat coconut cream (I used Trader Joes brand) OR 10 grams of coconut and 50 grams of unsweetened almond milk

•1/4 tsp sea salt

Ganache Chocolate Topping:

•3 ounces of Cocoa Bar In A Jar PB Cup or Chocolate Brownie mixed with 40 in grams of reduced fat coconut cream (if you skip the coconut cream, simply mix 4 ounces of CBJ with 5 grams of melted coconut oil.)

Makes 22 Mini PB Cups.  Macros each:
