Breakfast Banana Oat Bars

I had this recipe on my To-Do list for a while before FINALLY making it happen, and let me tell you, it was well worth the wait.  I finally had all the necessary ingredients all at the same time and made it happen.  It is so dang good and exceptionally nutritionally balanced.  The original recipe is by @amybofit and can be found on her page . I made a few tweaks to mine to make it dairy free, including using Silk plain soy yogurt and using a vegan protein powder ( I also adding extra sweetness with stevia and erythritol aka Swerve since my protein powder is unsweetened) and it is perfect!  Dense, but moist, high in fiber and protein and refined sugar free. #letsgetthispartystarted

I topped mine with a drizzle of Cocoa Bar In A Jar Protein PB and Iced Oatmeal Cookie (this combo together is unreal and paired with this banana bread is next level!) 
Let’s make High Protein Banana Bread Bars!

INGREDIENTS:
•170g (⅔ cup) plain greek non-fat yogurt ( or dairy free Silk plain Soy Yogurt)
•178g (2 large) Ripe Bananas
•120ml (½ cup) Unsweetened Vanilla Almond Milk
•230g (15 tbsp) Liquid Egg Whites
•12 oz bag cauliflower rice, cooked
•93g Pescience Cake Pop Protein Powder (or vegan Protein Powder)
•160g (2 cups) Old Fashioned Oats
•1 tsp Banana or Vanilla Extract
•1 tsp Cinnamon
•1 ¼ tsp Baking Powder
1 tsp Salt
•2 tbsp Stevia in the Raw (or Sweetener of choice) (optional) 

*Iced Oatmeal Cookie and Protein PB for drizzling.

DIRECTIONS:
-Preheat oven to 350°F and spray a 9×13 baking pan or line with parchment paper. Set aside.
-Add all ingredients to a bowl and immersion blend (or use a hand mixer) till smooth.
-Pour into baking pan.
-Bake for 35-40 minutes or until toothpick comes out clean.
