If you LOVE all things cookies and cream, you are going to LOVE these lightened up Oreo Cupcakes.  They are an absolutely delicious treat that have the perfect cupcake consistency (not rubbery protein-ish at all) and are perfectly suitable as a healthy snack or dessert.  Full of ‘good for you’ ingredients to support your healthy eating goals.  Packed with protein and low in calories, these cupcakes satisfy your sweet tooth without the sugar crash. Whether you’re counting macros, eating intuitively, watching your sugar intake or just someone who loves a good cupcake, you’ll love this recipe.




Preheat Your Oven:

Preheat your oven to 350°F (175°C).

Prepare Your Muffin Pan:

Line seven muffin pan cavities with parchment paper and spray them with non-stick spray to ensure the cupcakes don’t stick.

Blend Dry Ingredients:

In a high-speed blender, blend the oat flour, black cocoa powder, sea salt, powdered stevia, erythritol, protein powder, baking powder, and baking soda until well combined and the oat flour has reached a fine, flour-like consistency.

Add Wet Ingredients:

Add the nonfat Greek yogurt, egg whites, Chocolate Brownie or Cafe Mocha spread, and unsweetened almond milk to the blender. Blend again until all ingredients are well combined and the batter is smooth.

Fill Muffin Pan:

Pour the batter evenly into 7 prepared muffin pan cavities.


Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Cool and Top:

Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Top with *optional whipped cream and crumbled Oreo Cookie Thins.
