The Recipe: Classic Lightened Up Double Chocolate Cake
Dry Ingredients:
- 100 grams all-purpose flour
- 25 grams coconut flour
- 25 grams cocoa powder
- 3 grams sea salt
- 4 grams stevia
- 2 tsp baking powder
- 100 grams erythritol or granulated sweetener of choice (optional)
- 1 TB instant coffee
Wet Ingredients:
- 3 tsp vanilla extract
- 200 grams egg whites
- 150 grams nonfat Greek yogurt
- 100 grams nonfat milk
- 25 grams Chocolate Brownie Batter spread
Frosting:
- 1 box Simply Delish Chocolate Pudding (code MONIQUE saves you 10%)
- 240 ml nonfat milk
Directions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine all dry ingredients: all-purpose flour, coconut flour, cocoa powder, sea salt, stevia, baking powder, erythritol (if using), and instant coffee. Mix well.
- Add the wet ingredients: vanilla extract, egg whites, nonfat Greek yogurt, nonfat milk, and Chocolate Brownie Batter spread. Stir until well combined.
- Pour the batter into a parchment paper-lined or greased 8×8’’ round cake pan.
- Bake for 30-32 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the frosting by blending the Simply Delish Chocolate Pudding mix with nonfat milk using a hand mixer or high-speed blender. Store in the fridge until the cake is ready.
- Once the cake has completely cooled, frost it with the pudding mixture.
- Add any additional toppings you like—chopped dark chocolate, coconut, nuts, or chocolate chips are all great options!
