Lightened Up Almond Cake Recipe

Dry Ingredients:

  • 100 grams all-purpose flour
  • 50 grams coconut flour
  • 3 grams sea salt
  • 3 grams stevia
  • 2 tsp baking powder
  • 99 grams erythritol or sweetener of choice (optional)

Wet Ingredients:

  • 3 tsp almond extract
  • 250 grams egg whites
  • 200 grams nonfat Greek yogurt
  • 100 grams unsweetened cashew milk or nonfat milk
  • 30 grams Amaretto spread

Topping:

  • 20 grams crushed, slivered almonds

Instructions:

  1. Preheat your oven to 350°F (175°C). Line or grease an 8 x 8-inch round baking pan or dish.
  2. In a large mixing bowl, combine all dry ingredients.
  3. Add the wet ingredients to the dry mixture, stirring until smooth and well combined.
  4. Pour the cake batter into your prepared pan. Sprinkle the slivered almonds evenly over the top.
  5. Bake for 33-34 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before slicing into 8 pieces.  Dust with optional powdered sugar or erythritol and enjoy!
