Healthy, Low-Fat Cosmic Brownies 

You know there’s nothing I love more than a nutritionally optimized dessert (aka, fun, sneaky, healthy ingredients that make having a dessert as a meal, totally a breeze) to share with you all. So, imagine my excitement when challenged by a customer to create these Cosmic Brownies, and the outcome was a HUGE success!  I seriously was in love after the first bite and so was Daniel (my oh so honest, in a good way, critic, lol).   If you know me, you know I love taking some leaps of faith with ingredients, and doing so with these was truly the game changer (more on this below).  Another game-changing ingredient was using chocolate Nuzest protein powder.  Vegan protein in general, has a great, almost flour consistency, very different from whey proteins, giving recipes in general, a very comparable texture to traditional recipes (never dry or rubbery, if you know what I mean?)  If you haven’t tried it yet, I highly recommend trying it for yourself ( I also use it in my daily Green Smoothies).  You can use my code MONIQUE to save 15% if and/when you do.  But, back to the brownies…Packed with wholesome ingredients and a secret superhero, they’re bound to tantalize your taste buds while keeping your health goals on track.

Ok, so what is this secret ingredient I keep alluding to?  The star ingredient of these delectable brownies is beans! Yes, you read that right. If you’re not new here, then you know my love of beans is real and utilizing them in delicious treats like this a win win situation.  They lend these brownies a moist, fudgy texture without the need for excessive amounts of fat or flour. Plus, they’re loaded with fiber and protein, making them a powerhouse addition to any dessert.

But enough about beans, let’s dive into the recipe, shall we?

 

Ingredients:

Brownies:

Frosting:

Topping:

  • Optional sprinkles or Chocolate Chips or Chocolate Covered Candies

Instructions:

  1. Blend all your brownie ingredients in your high-speed blender till smooth. You may need to scrape down the sides in between.
  2. Once smooth, pour into a lined, 9×13 baking dish. Bake at 350°F for 25 for an underdone/fudgy brownie (this was perfect for me!  Just let cool completely as they continue to bake) OR 30 minutes for a more cooked-through brownie (still very moist though!).
  3. While those bake, make your frosting by blending all your frosting ingredients in your high-speed blender.
  4. When your brownies are done, let cool for at least an hour then spread your frosting over the top and sprinkle with optional sprinkles or chocolate candies.
  5. Cut into 8 large-sized pieces and enjoy!
