Funfetti Cake Bars: Every Day Is A Party

There’s something magical about Funfetti. The bright rainbow sprinkles and the soft, moist cake make these bars a festive treat that’s perfect for any celebration—or just because you deserve a sweet indulgence. Or maybe you want to celebrate the arrival of your Berry Birthday (pssst…there’s no wrong answer here ;). Today, I’m excited to share my favorite Funfetti Cake Bars recipe. It’s not only delicious but also mindful of your macros, making it a optimized nutritional delight.

Instructions:

  1. Prepare the Cake Bars:
  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine all the dry ingredients: all-purpose flour, coconut flour, vanilla pudding mix, erythritol, sea salt, powdered stevia, and baking soda.
  • Add in the wet ingredients: cashew milk, egg whites, Berry Birthday spread, and nonfat Greek yogurt. Mix well until a thick dough forms.
  • Line an 8×8 baking dish with parchment paper. Press the dough evenly into the baking dish. It will be sticky, so wet the back of a large spoon or spatula to make it easier.
  • Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely in the dish.
  1. Make the Frosting:
  • While the cake bakes, prepare the frosting. In a mixing bowl, combine the Greek yogurt, vanilla sugar-free pudding mix, nonfat milk, sea salt, and vanilla extract.
  • Use a hand mixer or a standing mixer to blend until smooth and well combined.
  • Set the frosting aside in the fridge to chill until the cake is ready.
  1. Assemble the Cake Bars:
  • Once the cake has cooled completely, spread the frosting evenly over the top.
  • Sprinkle with the funfetti sprinkles for that classic, colorful finish.
  • Cut into 8 bars and enjoy!
