Double Chocolate Protein Muffins

It’s time to treat yourself to these double chocolate muffins. The macros are excellent and these truly cakey, not eggy in any way protein muffins are the perfect pre/post workout, anytime snack OR base for your Creami creations! Check out last week’s blog post for my perfect vanilla Creami recipe to pair it with here.

Ingredients:

55 grams Kodiak cakes chocolate chip or chocolate baking mix
100 grams non fat Greek yogurt (I use Fage)
16 grams coconut flour
5 grams psyllium husk powder
55 grams Cocoa Bar PB Cup Spread
60 grams chocolate active stacks protein powder (code COCOABAR 10% off)
150 grams egg whites
1 tsp baking powder
1 tsp Vanilla
1/2 tsp Sea salt
Stevia to taste
65 grams Erythritol
70 ml unsweetened almond milk
7 grams dark cocoa powder

 

To make:

Combine all ingredients in your blender except your Kodiak cakes baking mix.  Once combined, hand stir in the Kodiak Cakes.  Line a muffin pan with 9 liners and fill to line of the muffin rim.  Bake at 350 for 22-24 minutes. Let cool completely.

Makes 9 muffins (Double for a larger batch!)
