 A Delicious and Fiber-Rich Treat…

Welcome back to the Cocoa Bar kitchen! Today, we’re making Coconut Chocolate Chip Bars, a delightful treat that’s not only delicious but also packed with fiber thanks to the addition of white northern beans. These bars are perfect for satisfying your sweet tooth while keeping you full and satisfied. Let’s dive into the recipe!

Ingredients

Base:

Toppings:

  • 14g unsweetened coconut flakes
  • 25g sugar-free chocolate chips

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper for easy removal and cleanup.
  2. Prepare the Batter: In a high-speed blender, combine all the ingredients for the base except the chocolate chips and coconut flakes. Blend until the mixture is smooth. You may need to scrape down the sides of the blender a few times to ensure everything is well incorporated.
  3. Add Toppings: Pour the smooth batter into the prepared baking dish. Sprinkle the unsweetened coconut flakes and sugar-free chocolate chips evenly over the top.
  4. Bake: Bake in the preheated oven for 38-40 minutes or until a toothpick inserted into the center comes out clean. (Note: Your bars will be a little underdone and dense, which is just the way you want them.)
  5. Cool and Serve: Allow the bars to cool completely in the baking dish before cutting them into 8 even-sized bars. Enjoy your Coconut Chocolate Chip Bars!

Nutritional Benefits

One of the star ingredients in these bars is white northern beans (and of course, Iced Oatmeal Cookie which gives these bars the perfect decadent touch;). These beans are a fantastic source of dietary fiber, which plays a crucial role in digestion and helps maintain a feeling of fullness, making them a great addition to any snack. Fiber not only aids in digestive health but also helps regulate blood sugar levels, contributing to overall well-being.

Tips and Variations

  • Vegan Option: Replace the egg whites with 3 flax eggs (3 tablespoons of ground flaxseed mixed with 9 tablespoons of water) and use a dairy-free yogurt.
  • Sweetener Choice: Feel free to use any granulated sugar-free sweetener you prefer. Just ensure it measures cup-for-cup like erythritol.
  • Flavor Twist: Experiment with different flavors of protein powder to change up the taste of your bars.
