Ingredients
Base:
- 240g white northern beans (about 1 can, drained and rinsed well)
- 65g oat flour (or blended oats in a high speed blender)
- 14g coconut flour
- 40g Nuzest Vanilla or Chocolate protein powder (I used chocolate Nuzest-code MONIQUE saves you 20%)
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 4g sea salt
- 4g powdered stevia
- 125g erythritol or granulated sugar-free sweetener of choice (*optional)
- 1 tsp vanilla extract
- 20g Iced Oatmeal Cookie spread
- 100g egg whites (substitute with 3 flax eggs for a vegan option)
- 80g nonfat Greek yogurt (or dairy free alternative)
- 100ml milk (use organic nonfat milk or unsweetened cashew/almond milk for a dairy-free option)
Toppings:
- 14g unsweetened coconut flakes
- 25g sugar-free chocolate chips
Instructions
- Preheat Your Oven: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper for easy removal and cleanup.
- Prepare the Batter: In a high-speed blender, combine all the ingredients for the base except the chocolate chips and coconut flakes. Blend until the mixture is smooth. You may need to scrape down the sides of the blender a few times to ensure everything is well incorporated.
- Add Toppings: Pour the smooth batter into the prepared baking dish. Sprinkle the unsweetened coconut flakes and sugar-free chocolate chips evenly over the top.
- Bake: Bake in the preheated oven for 38-40 minutes or until a toothpick inserted into the center comes out clean. (Note: Your bars will be a little underdone and dense, which is just the way you want them.)
