Macro Friendly Chocolate Brownie Protein Cookies
I LOVE cookies, but generally not the macros or ingredients. They’re just so sneaky aren’t they and add up so darn fast. So, instead I have for you this incredibly chewy, fudge brownie cookie that boasts a whopping (almost) 5 grams of protein per serving and only 1.8 grams of fat! Honestly, these are delicious and better than a traditional option with macros and ingredients like this. Ingredients:
Dry:
120 grams all purpose or gluten free flour
1 tsp baking soda
1/2 tsp sea salt
80 grams chocolate Active Stacks protein powder
60 grams PB2 or powdered peanut butter
90 grams Erythritol
Stevia to taste (*optional)
Wet:
60 grams melted Cocoa Bar PB Cup spread
1 tsp vanilla extract
90 grams egg whites
60 ml warm almond milk (microwaved for 20 seconds)
50 grams sugar free chocolate chips
To make:
Combine wet ingredients until incorporated well. Add dry ingredients. Mix well. Add in your chocolate chips. Dough will be very tacky and sticky. Refrigerate for 15-20 minutes (this will make working with the batter much easier, otherwise it will be very sticky). Drop large tablespoon portions (approximately 25 grams) onto a lined baking sheet and bake at 350 for 9-11 minutes, making sure to underbake slightly for that ooey gooey, chewy consistency. Press down on cookies to flatten while warm. Let sit for 5 minutes on the baking sheet to cool before removing from the pan. Store extras in an airtight container for up to 5 days on the counter, or 2 weeks refrigerated. Enjoy!
